500g buffalo mozzarella DOP
8 prawns, peeled
2 beef tomatoes
80g extra-vergin olive oil
Handful of fresh basil leaves
1.Cook prawns in salted boiling water for 2 minutes and allow to cool before peeling.
2.Slice the mozzarella and tomatoes.
3.Assemble the dish in alternative layers, stating with tomatoes, mozzarella and finishing with prawn on top.
4.Season with olive oil, salt and basil.
